I know, a break from the norm from us here, but I couldn't not share this with you!
I've made these little balls of peanut butter deliciousness several times now and they always go down a storm, plus they're super easy to make. Great as a pre race snack, or a post race treat.
This recipe can be easily altered to be Vegan, by substituting honey for agave nectar or maple syrup and ensuring your protein powder is vegan friendly.
Don't let the chia and protein fool you however, these little treats taste good for a reason...they're not healthy snacks, but they pack a powerful of instant energy for wen you really need it.
One of the reasons it ook me so long to get this post up was because there's one thing I don't do when I make food: use recipes!
I had no idea how much of anything I had put in, and people in general do not like my explaination of "yeah, just as much as seems right" or "until it's cooked", so sadly for me, I had to remake these beauties and keep tabs on what I used...tough life.
Mix it all up in a bowl. No really. Throw it in and mix it up. Have a taste, see if you want to add extra of any of the ingredients. I found it a little dry and not very chocolatey, so I added a touch more honey and some more protein power.
This mixture is so much easier to handle when cold, so once it's mixed, pop it in the fridge and go and do some burpees...
Now here's the icky bit. I hate touching people food (or having my food touched) so this doesn't sit well with me, i did try as many options as possible, but they didn't work, so..wash your hands really well and get rolling!
Place the balls on greaseproof paper, and if the mixture gets sticky, pop it back in the fridge.
This mix made 25 reasonable sized balls, they could probably be smaller to be honest, and they're so intense you can't handle that many in one go!
The final, optional stage is to coat them in chocolate. I don't know why you would take the option not to, but FYI, if you want to be healthier, you can choose not to...
Using dark chocolate melted in a bowl over boiling water, dip each ball into the chocolate to coat it, and pop it straight back onto the greaseproof. It will be messy, don't worry, absolutely no one cares what they look like, especially once they've tasted them. Trust me.
